Coffee Roasting: The Basics
Basic Workflow:
Preheat the roaster ➩ Load the green beans ➩ Begin roasting ➩ Unload and cool the beans
Factors Affecting Roasting:
- Bean variety / Processing method / Moisture content (best between 9%~12%) / Green bean freshness (in-season / past-season)
- Weather influences: Environmental temperature and humidity, e.g., extremely high or low temperatures, rainy days are not recommended
- Exhaust airflow (fan) smoothness, drum cleanliness, heater usage hours (degradation)
- Initial state before preheating: e.g., cold drum or already warm from continuous roasting
Preheating Settings and Recommendations:
- The default setting is Fixed Temperature Mode. Once the target temperature is reached, the system will automatically adjust the heater to maintain a stable temperature
- Preheating time can be affected by various factors, such as environmental temperature, humidity, and whether the drum is cold (unheated) or warm from previous roasting sessions
- To enhance stability: After reaching the target temperature, you can close the notification and continue preheating for a bit longer to improve roasting consistency (e.g., 3 to 5 minutes, adjustable based on personal preferences)
Roasting Tips:
- It is recommended to let the roaster cool down to below 100°C (when the cooling fan automatically stops) after each roast to improve consistency between roasts (approximately 8-10 minutes, depending on the previous roast level)
- Automatic First Crack detection can be set based on crack density or counts, according to your preference.
Alternatively, you can manually record the First Crack in real-time with a single tap, based on your own judgement.
Roasting Modes:
I'm a beginner and unsure how to roast
Auto Roasting + Official ProfilesI'm an advanced user and want to custom my own profile based on roasting history
Profile + Manual adjustmentsI'm a professional and want to roast in my own style
Manual Roasting
Official Profiles
- 100g (Sample Roasting)
Fast or slow roast, using a relatively straightforward roasting style. Perfect for sampling the flavor of new beans - 200g
Individual profiles customized for Washed, Natural, or Honey-processed coffee to ensure above-average flavors - 300g (Maximum capacity)
Each roast yields 1/2 pound, perfect for personal use, gifting, or small-volume sales
You can adjust the Auto Stop Roasting settings to unload the beans at your preferred roast level.
For example, using the official profile "Guatemala, Washed, 200g, Medium", which unloads at a bean temperature (BT) of 209°C with a Development Time Ratio (DTR) of 8% and a development time of 58 seconds. To achieve a darker roast than this, you can:
- Increase the default BT:209°C + 5°C,setting BT to 214°C
- Extend the Development time: 58s + 15s, setting it to 73s
- Increase the DTR: 8% + 3%, setting it to 11%
Recommended DTR (Development Time Ratio) for different coffee processing methods:
- Washed: 10~12%
- Anaerobic Washed : 9~11%
- Natural: 8~10%
- Anaerobic Natural : 6~10%
- Honey: 9~11%
- Anaerobic Honey: 7~10%
You can use Auto Roast with Official profiles in two ways: "Auto Repeat Recipe" and "Auto Repeat Profile (PID)."
Tips:
Use "Auto Repeat Recipe" if you are roasting in the same environment and can easily replicate the initial preheating state. This will give you the best consistency
Use "Auto Repeat Profile (PID)" when you are roasting in different environments. This mode will automatically control the heater to achieve the same bean temperature curve for consistent roasting results.
Note: Auto Roast results may vary if the roasting conditions change dramatically.
Any Profile + Manual Adjustments
Select an official preset profile or any roasting profile history, choose "Auto Repeat Recipe", then add or remove set points in Auto Recipe or edit the values according to your preferred roasting plan.
During the roasting process, the system will automatically operate based on the set Auto Recipe, while you can still manually adjust the heat, fan, and drum at any time.
Observe the changes in bean color and mark the "Yellowing" and "Browning" points. This allows you to set the values for those points in the Auto Recipe for your next auto roasting.
Fully Manual Roasting
Freestyle roasting that is entirely up to the roaster's preferences and skills
To increase Exhaust Temperature or the rate of rise (RoR) of Bean Temperature, you can increase the heat or turn down the fan. Conversely, you can decrease the heat or turn up the fan
The Exhaust Temperature is significantly affected by the fan speed
